Ingredients
- 1 can of chickpeas (rinsed, drained and patted dry)
- Fresh parsley, chopped
- 4 cloves garlic, minced
- 2 medium shallots, minced
- 2 tbsp sesame seeds
- 2 tsp cumin
- 1 tsp black pepper
- ½ tsp salt
- ¼ cardamom
- 3-4 Tbsp all-purpose flour
- 3-4 Tbsp olive oil for cooking
- Bread crumbs for coating
- Sesame seeds for coating
- 2 Ripe avocados
Instructions
- Add chickpeas, parsley, shallots, garlic, sesame seeds, cumin, salt, pepper and cardamom to a food processor or blender and mix/pulse to combine, scraping down sides as needed until thoroughly combined. You’re looking for a crumbly dough, not a smooth paste.
- Add 1 Tbsp of flour at a time and pulse/mix to combine until no longer wet and you can mold the dough into a ball without it sticking to your hands.
- Transfer to a mixing bowl, cover and refrigerate for 1-2 hours to firm up.
- Chop avocados into small balls and mould mixture around avocado into balls.
- Sprinkle on bread crumbs and sesame seeds.
- Fry in olive oil on medium heat for 4-5 minutes, flipping when the underside is deep golden brown.
- Enjoy.
